  • 300g gluten-free macaroni
  • 50g butter
  • 2 tbsp gluten-free plain flour
  • 500ml whole milk
  • 150ml double cream (optional for extra creaminess)
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder (optional)
  • 150g mature cheddar, grated
  • 50g mozzarella, grated
  • 50g Parmesan, grated
  • Salt & pepper to taste
  • For the crispy topping:
  • 50g Gluten Free Panko Crumb
  • 1 tbsp butter, melted
  • 1/2 tsp smoked paprika (optional)
  • 2 tbsp grated Parmesan
Method

1. Cook the pasta: Boil the gluten-free macaroni in salted water according to the packet instructions, then drain and set aside.

Make the cheese sauce:

2. In a saucepan, melt the butter over medium heat. Stir in the gluten-free flour and cook for 1-2 minutes, stirring continuously.
3. Gradually whisk in the milk, followed by the cream, stirring until smooth and thickened.
4. Add the mustard, garlic powder (if using), and season with salt and pepper.
5. Stir in the grated cheddar, mozzarella, and Parmesan until melted and smooth.
6. Combine: Mix the cooked macaroni into the cheese sauce, ensuring it’s well coated. Transfer to a greased baking dish.

Prepare the topping:

7. In a bowl, mix the Gluten Free Panko Crumb with melted butter, paprika (if using), and Parmesan.
8. Sprinkle evenly over the macaroni cheese.
9. Bake: Place in a preheated oven at 180°C (fan) / 200°C / 400°F for 15-20 minutes, or until golden and bubbling.

Serve:

10. Let it rest for a few minutes before serving. Enjoy!
