  • 6 tbsp vegetable oil
  • 4 onions, chopped
  • 1.5kg carrots, peeled and diced
  • 30g garlic, chopped
  • 2 tbsp dried thyme
  • 4 bay leaves
  • 3 tsp smoked paprika
  • 2 aubergines, diced
  • 4 courgettes, diced
  • 1.5kg dry Quick Hydrate Pea Mince, can be added straight to sauce
  • 5kg tinned chopped tomatoes
  • 2 litres vegetable stock
  • 500g tomato puree
  • 100g fresh basil, chopped
  • 50g flat leaf parsley, finely chopped
  • 3 tsp salt
  • 3 tsp ground black pepper
Method

1. Heat the oil in a large saucepan over a medium heat, add onions, carrots, garlic and thyme and cook for 10-15 minutes, stirring regularly until softened.

2. Add the bay leaves. smoked paprika, aubergines and courgettes and cook for another 15 minutes, again stirring regularly.

3. Add all remaining ingredients, bring to a simmer, and cook over a low heat for 45 minutes until the sauce has thickened slightly. Remove from the heat.
