Chicken Bites

Ingredients
- 2 chicken breasts, cut into bite-sized pieces
- 1 cup Gluten Free Panko Crumb
- 1/2 cup Yellow Pea Flour
- 1 egg, beaten
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Cooking oil spray

Instructions:
- Preheat the oven to 200°C (400°F) or set your air fryer to 180°C (350°F).
- Prepare the coating stations:
- Bowl 1: Mix yellow pea flour, paprika, garlic powder, salt, and pepper.
- Bowl 2: Beat the egg.
- Bowl 3: Add gluten free panko crumb..
- Coat the chicken:
- Dredge each chicken piece in the flour mix.
- Dip into the beaten egg.
- Roll in the gluten-free panko crumb, ensuring an even coat.
- Bake or air fry:
- Arrange chicken bites on a baking tray lined with parchment paper or in an air fryer basket.
- Spray lightly with cooking oil.
- Bake for 20-25 minutes (or air fry for 15 minutes), flipping halfway, until golden brown and cooked through.
