Chicken Bites

Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 1 cup Gluten Free Panko Crumb
  • 1/2 cup Yellow Pea Flour
  • 1 egg, beaten
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cooking oil spray

Method

Instructions:

  1. Preheat the oven to 200°C (400°F) or set your air fryer to 180°C (350°F).
  2. Prepare the coating stations:
    • Bowl 1: Mix yellow pea flour, paprika, garlic powder, salt, and pepper.
    • Bowl 2: Beat the egg.
    • Bowl 3: Add gluten free panko crumb..
  3. Coat the chicken:
    • Dredge each chicken piece in the flour mix.
    • Dip into the beaten egg.
    • Roll in the gluten-free panko crumb, ensuring an even coat.
  4. Bake or air fry:
    • Arrange chicken bites on a baking tray lined with parchment paper or in an air fryer basket.
    • Spray lightly with cooking oil.
    • Bake for 20-25 minutes (or air fry for 15 minutes), flipping halfway, until golden brown and cooked through.
  5. Serve hot with your favourite dipping sauce!
