INGREDIENTS

6 tbsp vegetable oil

4 onions, chopped

1.5kg carrots, peeled and diced

30g garlic, chopped

2 tbsp dried thyme

4 bay leaves

3 tsp smoked paprika

2 aubergines, diced

4 courgettes, diced

1.5kg dry Quick Hydrate Pea Mince, can be added straight to sauce

5kg tinned chopped tomatoes

2 litres vegetable stock
-
500g tomato puree
-
100g fresh basil, chopped
-
50g flat leaf parsley, finely chopped

3 tsp salt
-
3 tsp ground black pepper
METHOD
Heat the oil in a large saucepan over a medium heat, add onions, carrots, garlic and thyme and cook for 10-15 minutes, stirring regularly until softened.
Add the bay leaves. smoked paprika, aubergines and courgettes and cook for another 15 minutes, again stirring regularly.
Add all remaining ingredients, bring to a simmer, and cook over a low heat for 45 minutes until the sauce has thickened slightly. Remove from the heat.
